Add a new status (e.g. “Closed” / “Inactive”) that allows an itinerary to be deactivated without being labeled as canceled. So it remains accessible in a limited view for clients (e.g. only the first page of the itinerary is visible, without the ability to continue further) and correctly stored for historical reference and filtering.
